Ingredients
- 1/2 head of Napa Cabbage Kimchi (equivalent to 2 whole heads)
- 1 Tbsp Sugar
- 3 Tbsp Gochugaru (Korean chili flakes)
- 3 Tbsp Sesame Oil
- 1/2 cup Cooking Oil (approx. 100ml)
- 1 Tbsp Minced Garlic
Cooking Instructions
Step 1
First, prepare the kimchi. Roughly chop it into bite-sized pieces, similar to ‘mak kimchi’ (roughly chopped kimchi). Place the chopped kimchi in a colander to drain some of the kimchi juice. Don’t squeeze out all the juice; this will help keep the kimchi moist when stir-fried.
Step 2
In a wide pan or wok, combine the prepared kimchi, gochugaru, cooking oil, sugar, sesame oil, and minced garlic. Mix everything thoroughly to ensure the kimchi is evenly coated with all the seasonings. It’s important to mix well at this stage.
Step 3
Once the seasonings are well mixed with the kimchi and it begins to simmer, reduce the heat to slightly lower than medium. Stir the kimchi every 3 minutes to prevent it from sticking to the bottom of the pan. Continue to stir-fry for approximately 20-30 minutes, until the white stems of the kimchi become translucent. The longer you stir-fry, the milder the sourness and deeper the flavor will become.
Step 4
The stir-fried kimchi is ready when the stems turn translucent and most of the moisture has evaporated! This finished stir-fried kimchi can be enjoyed as a side dish on its own. Alternatively, when stir-frying pork, adding this kimchi at the end will create a fantastic flavor combination. ^^

Finally, sprinkle some toasted sesame seeds on top for added nutty flavor and an appetizing look.
