Seasoning

  • Olive oil 2 Tbsp
  • Soy sauce 2 Tbsp
  • Anchovy sauce 1 Tbsp
  • Oligosaccharide 2 Tbsp
  • Sugar 1.5 Tbsp (adjust to taste)
  • Sesame oil a little
  • Sesame seeds 1 Tbsp
  • Black pepper a pinch

Cooking Instructions

Step 1

First, wash the garlic scapes thoroughly under cold running water. Ensure all dirt and debris are removed. Then, cut them into manageable lengths of about 4-5 cm (approximately 1.5-2 inches).

Step 1

Step 2

Prepare the pork loin, ensuring it’s thinly sliced, as is common for stir-fries or ‘japchae’ (Korean glass noodle dish).

Step 2

Step 3

Heat olive oil in a pan over medium-high heat. Add the drained garlic scapes and stir-fry for 1-2 minutes to slightly tenderize them while retaining some crispness. Then, add the pork loin to the pan and continue to stir-fry together.

Step 3

Step 4

Add the soy sauce, anchovy sauce, oligosaccharide, sugar, and black pepper to the pan. Stir well to coat everything evenly. This is where the delicious sweet and savory flavor develops. Feel free to adjust the amount of sugar or oligosaccharide to suit your personal preference for sweetness.

Step 4

Step 5

Continue to stir-fry over high heat just until the pork loin is cooked through. Be careful not to overcook, as this can make the meat tough. Finish by drizzling in a little sesame oil and sprinkling with sesame seeds. Your flavorful Garlic Scape and Pork Loin Stir-fry is now ready to be enjoyed!
