Main Ingredients- 1 bunch garlic scapes (about 200g)
- 2 handfuls dried shrimp (about 30g)
Seasoning- 1 Tbsp olive oil
- 2-3 Tbsp soy sauce (adjust to taste)
- 2 Tbsp oligosaccharide (adjust sweetness as desired)
- 1 tsp sesame oil
- A pinch of sesame seeds

Cooking Instructions
Step 1
Thoroughly wash the fresh garlic scapes under running water. Trim off the tough ends and cut them into bite-sized pieces, about 4-5 cm long. To remove excess moisture and ensure a crisp texture, gently rub them in cold water, then drain them completely in a colander.

Without adding any oil, place the dried shrimp in a dry pan and stir-fry for 1-2 minutes over medium heat. This crucial step helps to remove any dampness and the ‘fishy’ smell from the shrimp, enhancing their savory flavor and making them delightfully chewy.

Remove the dried shrimp from the pan. Gently shake them to discard any small bits or dust, and set them aside on a separate plate. This ensures a cleaner stir-fry and prevents any unwanted textures in the final dish.
