Main Ingredients

  • 2 eggplants
  • 1 clove garlic, minced

Seasoning

  • 1/2 Tbsp tuna extract
  • Sesame seeds, for garnish
  • Perilla oil (Deulgireum), for cooking

Cooking Instructions

Step 1

First, heat a pan over medium heat and add a generous amount of perilla oil. Sauté the minced garlic until fragrant to create garlic-infused oil. Be careful not to burn the garlic. Once the savory aroma fills the air, add the sliced eggplants and stir-fry them together.

Step 2

Using ‘Jin Tuna Extract’, which has a reduced smoky flavor, can add a deeper, more refined umami taste. While I usually prefer soy sauce or fermented soy sauce, I tried this new tuna extract because it has less smoke flavor and is versatile for various dishes. Step 3

Instead of adding all the tuna extract at once, add it in two portions. Add half first and stir-fry until the eggplant absorbs the flavor. Taste and add the remaining amount if needed. This method helps you perfectly adjust the saltiness.

Step 3

Step 4

Continue to stir-fry the eggplant until it softens and absorbs the flavors of the tuna extract. Finally, sprinkle with sesame seeds for added nutty aroma. Your delicious stir-fried eggplant is ready! It’s especially wonderful served over a bowl of warm rice.
