Main Ingredients

  • 150g ground pork
  • 3 eggplants
  • About 15cm white part of a leek

Pork Marinade

  • 1 Tbsp oyster sauce
  • 1 Tbsp oligosaccharide
  • 1/2 Tbsp minced garlic

Stir-fry Seasoning

  • 2 Tbsp canola oil
  • 3 Tbsp soy sauce (or seasoned soy sauce)
  • 1 Tbsp oligosaccharide
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp minced garlic
  • 1 Tbsp sesame seeds (toasted)

Cooking Instructions

Step 1

First, in a bowl, combine the ground pork (150g) with oyster sauce (1 Tbsp), minced garlic (1/2 Tbsp), and oligosaccharide (1 Tbsp). Mix well with your hands until thoroughly combined. This step marinates the pork, tenderizing it and infusing it with flavor.

Wash the eggplants (3) thoroughly under running water. Cut them into bite-sized pieces, about 1.5cm thick, either diagonally or into half-moons. Chop the white part of the leek (about 15cm) into small pieces. Feel free to adjust the amount of leek to your preference.

Heat a wok or a deep skillet over medium heat. Add canola oil (2 Tbsp) and sauté the chopped leeks until they become fragrant. This process of making ‘scallion oil’ enhances the overall aroma and depth of the dish.

Once the leeks are fragrant, add the marinated ground pork. Use chopsticks or a spatula to break up the pork and stir-fry until it’s no longer pink and cooked through. Ensure the pork is fully cooked before adding the next ingredient.

When the pork is cooked, add the cut eggplants to the pan. Pour the soy sauce (3 Tbsp) along the edge of the pan, allowing it to sizzle and caramelize slightly before tossing everything together. Stir-fry quickly until the eggplant pieces are slightly softened.

Once the eggplant has softened a bit, add minced garlic (1 Tbsp), gochugaru (2 Tbsp), and oligosaccharide (1 Tbsp). Stir-fry everything together for another minute until all the ingredients are well coated with the seasoning. Be careful not to burn the gochugaru.
