Today, I’m sharing a simple and quick side dish recipe: Stir-Fried Eggplant with Oyster Sauce! It’s incredibly easy to make and perfect for a weeknight meal when you need a delicious accompaniment to your rice. The savory oyster sauce perfectly complements the tender texture of the eggplant, creating a dish that’s sure to become a favorite.
Main Ingredients- 3 eggplants
- 4 cloves garlic, thinly sliced
- 1 stalk green onion, chopped
Seasoning- 3 Tbsp oyster sauce
- 1/2 Tbsp sesame oil
- 3 Tbsp oyster sauce
- 1/2 Tbsp sesame oil
Cooking Instructions
Step 1
Heat a wide pan over medium heat and add a generous amount of cooking oil. Add the thinly sliced garlic and chopped green onion. Stir-fry gently until fragrant and a delicious garlic-and-scallion infused oil is created. Be careful not to burn them; cooking over low heat is key to developing the aroma.
Step 2
Wash the eggplants thoroughly and pat them dry. Slice them into rounds about 0.5 cm thick, or into your desired shape. Add the prepared eggplant to the pan with the infused oil. Stir-fry over high heat until the eggplant softens slightly and becomes lightly golden. Cooking quickly over high heat prevents the eggplant from becoming watery and helps maintain its texture.
Step 3
Once the eggplant is slightly tender, pour in the oyster sauce (3 Tbsp). Stir-fry rapidly over high heat to coat the eggplant evenly with the sauce. Drizzle in the sesame oil (1/2 Tbsp) for a glossy finish and nutty aroma. Stir once more after turning off the heat. This simple yet delicious Stir-Fried Eggplant with Oyster Sauce is ready! Enjoy this wonderfully easy and flavorful side dish.
