A truly irresistible side dish that’s even better with beef! This stir-fried eggplant is so delicious, you’ll want to mix it right into your rice. A must-try recipe that’s both simple and satisfying.
Main Ingredients- 100g ground beef
- 2 eggplants
- A little green onion
Seasoning- 1 Tbsp soy sauce
- 1.5 Tbsp oyster sauce
- 0.5 Tbsp sugar
- 0.5 Tbsp minced garlic
- A pinch of black pepper
- 0.5 Tbsp sesame oil
- 0.5 Tbsp corn syrup (or oligodang)
- A little sesame seeds
- 1 Tbsp soy sauce
- 1.5 Tbsp oyster sauce
- 0.5 Tbsp sugar
- 0.5 Tbsp minced garlic
- A pinch of black pepper
- 0.5 Tbsp sesame oil
- 0.5 Tbsp corn syrup (or oligodang)
- A little sesame seeds
Cooking Instructions
Step 1
First, prepare the beef. In a bowl, combine 100g of ground beef with 1.5 Tbsp oyster sauce, 1 Tbsp soy sauce, 0.5 Tbsp sugar, 0.5 Tbsp minced garlic, and a pinch of black pepper. Mix well and let it marinate while you prepare the vegetables. This step allows the flavors to meld beautifully. (If you don’t have ground beef, you can thinly slice beef sirloin or a similar cut.)
Step 2
Wash the 2 eggplants thoroughly after trimming off the ends. Cut them lengthwise in half, then slice them diagonally into about 0.7cm thick pieces. Thinly slice about 1/4 of an onion and finely chop the green onion.
Step 3
Heat 2 Tbsp of cooking oil in a pan over medium heat. Add the chopped green onion and stir-fry for about 30 seconds until fragrant. This step infuses the oil with a lovely aroma.
Step 4
Once the green onion is slightly cooked and fragrant, add the marinated ground beef to the pan. Break up any clumps and stir-fry until the beef is no longer pink.
Step 5
When the beef has turned brown and is cooked through, add the sliced onion. Stir-fry with the beef and onion for about 1 minute, until the onion becomes translucent.
Step 6
Finally, add the diagonally sliced eggplant to the pan. Stir gently to combine with the beef and onion mixture.
Step 7
Continue to stir-fry until the eggplant softens and wilts slightly, absorbing the flavors. Then, add 0.5 Tbsp of corn syrup (or oligodang), 0.5 Tbsp of sesame oil, and a sprinkle of sesame seeds. Stir everything together quickly for another minute to finish. (Tip: To prevent the eggplant from breaking apart, try holding cooking utensils in both hands and gently tossing the ingredients.)
Step 8
Transfer the stir-fried eggplant and beef to a serving dish. Sprinkle with sesame seeds for a final touch. This dish is a fantastic side for rice or a wonderful ingredient for bibimbap!
