Ingredients

  • 20 Cheongyang peppers (called ‘kkwari gochu’)
  • 140g ham
  • 1/2 onion

Seasoning

  • 2 Tbsp soy sauce
  • 1/2 Tbsp oyster sauce
  • 3 cloves garlic
  • 2 Tbsp oligosaccharide or corn syrup
  • 1 Tbsp cooking oil
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, prepare the 20 Cheongyang peppers. Wash them thoroughly under running water, trim off the stems, and cut them into bite-sized pieces, about 3 equal segments. These peppers offer a delightful chewy texture and a mild peppery kick that pairs wonderfully with the savory ham.

Step 1

Step 2

Next, slice the 140g of ham. You can cut it into pieces similar in size to the peppers, or according to your preference. If you’re using pre-sliced ham, you can use it directly. For a block of ham, cut it into appropriate slices or cubes.

Step 2

Step 3

Slice half an onion thinly. Mince 3 cloves of garlic to yield about 1 tablespoon of minced garlic. The minced garlic will add a fragrant depth to the dish.

Step 3

Step 4

Heat 1 tablespoon of cooking oil and 1 tablespoon of sesame oil in a pan over medium-low heat. Add the sliced onion first and stir-fry it until it becomes translucent. Sautéing the onion beforehand releases its natural sweetness and aroma, enhancing the overall flavor.

Step 4

Step 5

Once the onions start to turn translucent, add the sliced ham to the pan. Continue to stir-fry gently over low heat. This allows the ham to release some of its savory fat, which will coat and flavor the onions. Cook until the ham is lightly browned.

Step 5

Step 6

When the ham is cooked and the onions are softened, add the 1 tablespoon of minced garlic. Stir-fry for about 1 minute until the garlic becomes fragrant. Make sure the garlic is well incorporated with the other ingredients.

Step 6

Step 7

Now, add the prepared Cheongyang peppers to the pan. Stir-fry everything together for about 1-2 minutes, just until the peppers begin to soften slightly. It’s important not to overcook the peppers, as they can become mushy. We want to retain a bit of their crispness.

Step 7

Step 8

Finally, add the seasoning ingredients: 2 tablespoons of soy sauce, 1/2 tablespoon of oyster sauce, and 2 tablespoons of oligosaccharide or corn syrup. Stir well to coat all the ingredients evenly with the sauce. Cook for another 1-2 minutes until the sauce thickens slightly. If you don’t have oyster sauce, you can add a little more soy sauce to achieve a similar flavor profile.

Step 8

Step 9

The key to a delicious stir-fried Cheongyang pepper and ham dish is to serve it while the peppers are still slightly crisp. Overcooking will make them lose their texture, especially after refrigeration. This simple yet incredibly flavorful dish is a perfect accompaniment to rice or a great addition to your lunchbox. Enjoy this incredibly easy and satisfying recipe!
