I decided to clear out the ingredients in my fridge for a light dinner and a drink, and made this savory and sweet beef brisket and bean sprout stir-fry. It’s perfect with a glass of soju! ^^
Main Ingredients- 200g beef brisket
- 1 handful bean sprouts (approx. 100g)
- A little green onion (white or green parts)
Seasoning Ingredients- 5 Tbsp soy sauce
- 2 Tbsp cooking wine (mirin, etc.)
- 1 Tbsp oligosaccharide (or corn syrup)
- 2 Tbsp plum extract
- A little sesame seeds
- A little black pepper

Cooking Instructions
Step 1
Wash the fresh bean sprouts thoroughly under running water and drain them well in a colander. This helps prevent the dish from becoming too watery.
Step 2
Slice the green onion diagonally into about 0.5cm thick pieces. (Tip: Using the green parts of the scallion today will add an even more fragrant flavor.)
Step 3
Add all the prepared bean sprouts to a heated pan. If the pan is sufficiently hot, the bean sprouts will wilt slightly while retaining a pleasant crispness.
Step 4
Stir-fry the bean sprouts over high heat. Once they start releasing moisture, arrange the beef brisket on top. As the brisket cooks and loses its redness, add the soy sauce, cooking wine, oligosaccharide, plum extract, and pepper. Add the sliced green onion as well. Cover the pan and let it steam-cook for about 1-2 minutes until everything is tender and the flavors meld. This step ensures the sauce evenly coats all ingredients.
Step 5
Remove the lid and give everything a final quick stir to ensure the sauce is well combined. Transfer to a serving plate and sprinkle generously with sesame seeds. Your delicious and easy beef brisket and bean sprout stir-fry is complete! Enjoy it as a fantastic bar snack or a hearty side dish.
