Stir-fried Baby Bok Choy with Shrimp in Oyster Sauce

Are your kids picky eaters when it comes to shrimp? I created this recipe to help them enjoy it more! It’s simple yet packed with umami flavor thanks to oyster sauce, and my kids absolutely loved it.

Main Ingredients

  • Fresh shrimp 200g
  • Baby bok choy 200g
  • Scallion (green onion) 2/3 stalk
  • Garlic 5 cloves
  • Sesame seeds, for garnish
  • Cooking oil 2 Tbsp

Seasoning

  • Soy sauce 1 Tbsp
  • Oyster sauce 1/2 Tbsp
  • Oligosaccharide (or honey/corn syrup) 2/3 Tbsp

Thickener (Optional)

  • Cornstarch 1 Tbsp
  • Water 1 Tbsp

Cooking Instructions

Step 1

Wash the baby bok choy thoroughly. Briefly blanch it in boiling water for about 20 seconds to keep its crisp texture. Be careful not to overcook it, as it can become mushy.

If using pre-cleaned frozen shrimp, thaw them first. Then, boil them in water until they turn a vibrant pink color. (For fresh shrimp, make sure to devein them.)

Finely chop about 2/3 of a scallion. Chop it into bite-sized pieces, suitable for children. (Feel free to adjust the amount to your preference.)

Thinly slice the 5 garlic cloves. Slicing them this way allows their flavor to infuse beautifully into the cooking oil.

Chop the blanched baby bok choy into bite-sized pieces. Gently squeeze out any excess water.

Heat 2 tablespoons of cooking oil in a pan over medium-low heat. Add the chopped scallions and sliced garlic. Stir-fry gently until fragrant and the garlic is lightly golden. Don’t let the garlic burn.

Once the garlic starts to turn golden, add the chopped baby bok choy. Stir-fry quickly over high heat to maintain its crispness. Avoid overcooking.

Add the soy sauce, oyster sauce, and oligosaccharide. Stir-fry quickly to coat the vegetables evenly with the sauce and allow the flavors to meld.

When the sauce is well combined with the vegetables, add the blanched shrimp. Stir-fry for about 1 minute, just until the shrimp are coated in sauce. Be careful not to overcook the shrimp, as they can become tough.

If you prefer a thicker sauce, prepare a cornstarch slurry by mixing 1 Tbsp cornstarch with 1 Tbsp water. Gradually add this mixture to the pan while stirring until the desired consistency is reached. The sauce will thicken quickly, so remove from heat as soon as it’s thick enough. (This step is optional.)
