We’re stir-frying angled luffa gourd and anchovies together with a soy sauce base, creating a wonderfully moist and flavorful dish.
Main Ingredients (using rice bowl as measurement)- Angled Luffa Gourd (Kkwarigochu) 2 rice bowls
- Medium Anchovies 1 rice bowl
- Water 1.3 rice bowls
Seasoning (using tablespoon as measurement)- Soy Sauce (Jin Ganjang) 2 Tbsp
- Soup Soy Sauce (Guk Ganjang) 2 Tbsp
- Rice Syrup (JoCheong) 1 Tbsp
- Minced Garlic 1 Tbsp
- Plum Extract 1 Tbsp
- Black Pepper, a pinch
- Toasted Sesame Seeds, a pinch
- Soy Sauce (Jin Ganjang) 2 Tbsp
- Soup Soy Sauce (Guk Ganjang) 2 Tbsp
- Rice Syrup (JoCheong) 1 Tbsp
- Minced Garlic 1 Tbsp
- Plum Extract 1 Tbsp

Cooking Instructions
Step 1
First, prepare the medium anchovies. Heat a dry frying pan over low heat, then add the anchovies without any oil and stir-fry for about 2-3 minutes. This process helps to remove any fishy smell and enhance the anchovies’ flavor and crispiness.
Step 2
Wash the angled luffa gourds thoroughly and remove the stems. You can leave them whole or cut them into 2-3 cm pieces, as preferred. To allow the sauce to penetrate better and add a slight spiciness, prick them a few times with a toothpick or make small cuts at the top and bottom ends when trimming the stems. This helps the sauce to absorb more effectively, resulting in a tastier dish. Add the prepared angled luffa gourds to the pan with the stir-fried anchovies. Pour in 1 Tbsp of plum extract and stir-fry briefly until the gourds begin to soften slightly.
Step 3
Now it’s time to add the delicious seasonings. Pour in 1.3 rice bowls of water, 2 Tbsp of soy sauce, 2 Tbsp of soup soy sauce (or homemade soy sauce), 1 Tbsp of rice syrup (or corn syrup), and 1 Tbsp of minced garlic into the pan. Stir everything together to combine the sauces. Continue to cook over medium-low heat until the angled luffa gourds turn a vibrant color and become tender, but be careful not to overcook them until they are mushy.
Step 4
Finally, sprinkle in a pinch of black pepper and a generous amount of toasted sesame seeds to finish. The sauce will reduce and thicken slightly, coating the angled luffa gourds and anchovies beautifully, making them incredibly flavorful. This dish is a perfect side for rice, and you’ll find yourself wanting to eat more and more!
