I’ve already finished the batch of napa cabbage kimchi my mother sent from home, and now I’m using the aged kimchi my sister gave me for various dishes. I was craving a tangy and sweet kimchi stir-fry, so I decided to make it with plenty of perilla oil this time. It turned out incredibly delicious, with a depth of flavor that’s truly addictive! It’s a perfect side dish that will make you want more rice.

  • 1/4 head of aged kimchi, washed and cut into bite-sized pieces
  • 1 stalk of green onion, thinly sliced

  • 2 Tbsp perilla oil
  • 1 Tbsp cooking oil
  • 1 Tbsp minced garlic

First, rinse the aged kimchi under running water to remove any harsh sourness, then cut it into bite-sized pieces. You can adjust the rinsing amount based on the sourness and saltiness of your kimchi. Wash the green onion and thinly slice both the white and green parts.

Heat a pan over medium heat, add 1 tablespoon of cooking oil, and then add 1 tablespoon of minced garlic. Slowly sauté the garlic over low heat until fragrant, creating garlic-infused oil. Be careful not to burn the garlic; this is key to its aromatic flavor.

Once the garlic is fragrant, add the cut aged kimchi to the pan along with 2 tablespoons of perilla oil. Stir-fry the kimchi and perilla oil over medium heat until the kimchi softens slightly and the nutty aroma of the perilla oil blends in. Once the kimchi is tender, add the sliced green onions and continue to stir-fry until they wilt.

When the kimchi is well stir-fried, it’s time to add the seasonings. Add 1/2 tablespoon of tuna extract, 2 tablespoons of gochugaru, 1 tablespoon of sugar, and 1 tablespoon of honey. Stir everything together thoroughly so the seasonings evenly coat the kimchi. The sugar and honey will balance the sourness of the kimchi, while the tuna extract adds a savory depth.

Once the seasonings are well absorbed and the kimchi looks deliciously stir-fried, turn off the heat. Transfer the finished aged kimchi stir-fry with perilla oil to a serving dish.
