This aged kimchi dish was created out of a desire to enjoy the abundant aged kimchi we had. It offers a wonderfully sweet and sour flavor profile. It’s a perfect side dish that balances the tangy punch of aged kimchi with a touch of sweetness and the rich aroma of perilla oil.
Ingredients- 1 head of aged kimchi (approx. 1kg)
- 1 Tbsp minced garlic
- 1/2 Tbsp Korean soybean paste (Doenjang)
- 1/2 Tbsp sugar (adjust to kimchi’s sourness)
- 1 Tbsp cooking oil
- 1 Tbsp perilla oil
- A small amount of green onion (chopped)
- 1 green chili pepper (chopped, optional)
Cooking Instructions
Step 1
First, prepare one head of aged kimchi. Shake off any excess brine and outer seasonings, or give it a light rinse under running water if it’s very salty. Cut the kimchi in half, then into bite-sized pieces.
Step 2
Instead of cutting the aged kimchi with a knife, tearing it by hand will help the seasoning penetrate better and result in a softer texture. Tear the cut kimchi into manageable pieces with your hands.
Step 3
Place all the torn aged kimchi into a heated pan.
Step 4
Now, let’s season the aged kimchi. Add 1/2 Tbsp Doenjang, 1 Tbsp minced garlic, 1/2 Tbsp sugar, and 1 Tbsp cooking oil to the kimchi in the pan. Gently mix and marinate them together. If your aged kimchi is quite sour, you can add a little more sugar to balance the flavor. It’s important to thoroughly mix the seasoning into the kimchi so it can absorb the flavors.
Step 5
We will now stir-fry the seasoned aged kimchi over medium heat. You don’t need to cook it for too long; just enough for the seasoning to evenly coat the kimchi and release its delicious aroma. It should be lightly softened.
Step 6
Once the aged kimchi is partially stir-fried, add the chopped green onion and green chili pepper, and continue to stir-fry. Cook them just enough to soften slightly, preserving their fresh flavor and slight crunch. You can adjust the amount of green chili pepper based on your preference for spiciness.
Step 7
When the green onion and chili pepper are cooked to a pleasant crisp-tender stage, turn off the heat. After turning off the heat, add 1 Tbsp of perilla oil to further enhance the flavor of the stir-fried aged kimchi. Gently mix it with the residual heat of the pan until evenly distributed. The aroma of the perilla oil will beautifully infuse the dish.
Step 8
