As kimchi-making season arrives, you’ll feel grateful for any aged kimchi (mukimchi) you still have. This dish is made by stir-frying aged kimchi generously with perilla oil. It’s a delicious side dish that makes rice disappear!
Ingredients- 1 whole head of aged kimchi (mukimchi)
- 2 Tbsp perilla oil
- 1 Tbsp minced garlic
- 1 Tbsp sesame seeds
- Pinch of sugar (to taste)
- Small amount of green onion, chopped
- Small amount of black sesame seeds (for garnish)

Step 1

Step 2
Rinse the aged kimchi thoroughly under running water. (Adjust the rinsing frequency based on the saltiness and sourness of your kimchi.) Soak the rinsed kimchi in cold water for about 2 hours, changing the water periodically to gently reduce its sourness and saltiness. After soaking, drain the kimchi well, squeezing out as much water as possible. Then, chop it into bite-sized pieces (about 2-3 cm wide) to prevent the filling from clumping together.
Step 3
Heat a pan over medium-low heat and add 2 tablespoons of perilla oil. Add the chopped aged kimchi and begin to stir-fry. Continue to stir-fry for about 5-7 minutes until the kimchi becomes tender and slightly translucent. This process removes any strong odors and brings out a nutty aroma.
Step 4
Once the kimchi is well stir-fried, add a pinch of sugar to balance the flavors. If your kimchi is particularly sour, you can add a little more sugar. Stir well to combine and cook for another 1-2 minutes.

Now it’s time to add the fragrant green onions. Add the chopped green onions and stir-fry briefly with the kimchi for another minute. The sweetness and aroma of the green onions will further enhance the dish.
