Main Ingredients- 1 zucchini
- 2 shrimp
- 1 egg
- 30g pollack roe
Cooking Instructions
Step 1
First, wash the zucchini thoroughly and cut it lengthwise into 4 equal pieces. Aim for a moderate thickness so it doesn’t fall apart while steaming.
Step 2
Using a spoon, carefully scoop out the seeds and inner part of the zucchini to create a hollow space, preparing it to hold the filling. It will resemble a small boat.
Step 3
Peel and devein the shrimp. Then, mince them into small, pea-sized pieces. This will provide a delightful texture and a touch of sweetness when cooked.
Step 4
In a mixing bowl, crack the egg. Add the minced green onion and minced garlic. Then, add the prepared shrimp and the pollack roe (seeds only, removed from the membrane). Gently mix everything together until well combined.
Step 5
Carefully spoon the prepared filling mixture into the hollowed-out zucchini halves. Arrange the filled zucchini in a steamer basket over boiling water. Cover and steam over medium heat for about 10 minutes, or until the zucchini turns translucent and is tender.
Step 6
If you have any filling mixture left, finely chop the stems from the shiitake mushrooms. Add the chopped shiitake mushrooms to the remaining filling and mix well. This step is optional but adds a wonderful earthy aroma and chewy texture.
Step 7
If you used shiitake mushrooms, you can remove the partially steamed zucchini, top with thinly sliced shiitake mushrooms, or refill with the mixture containing chopped shiitake, and steam for another 7 minutes. (Skip this if not using shiitake). Reserve the shrimp heads and place them on top as a garnish just before serving for an appealing presentation.
