  • 3 large napa cabbage leaves
  • 3 shiitake mushrooms
  • 1/3 carrot
  • A bunch of garlic chives
  • A small handful of Korean field cress (for a spring aroma)

First, prepare all your vegetables. Wash them thoroughly. Cut the napa cabbage leaves into bite-sized pieces. For the shiitake mushrooms, remove the stems and slice the caps. Peel the carrot and slice it thinly, either into rounds or julienne strips. Wash the garlic chives and cut them into 4-5 cm lengths. Trim and clean the Korean field cress.

In a bowl, combine all the prepared vegetables except for the Korean field cress. Mix the napa cabbage, shiitake mushrooms, carrot, and garlic chives together. This step makes it much easier to layer them with the pork belly later.
