Ingredients- 24 fresh perilla leaves
- 1 Tbsp soy sauce
- 1 Tbsp gochugaru (Korean chili powder)
- 1 Tbsp minced garlic
- 1 tsp plum extract (maesilcheong)
- 1 tsp fish sauce (anchovy or sand lance)
- 1 tsp crushed toasted sesame seeds
- 2 stalks green onions (scallions)
- 1 green chili pepper
- 1 red chili pepper
Cooking Instructions
Step 1
First, prepare the vegetables that will enhance the flavor of the seasoning. Finely chop the washed green onions. Deseed the green and red chili peppers and then thinly slice them. These vegetables will add a richer flavor to the seasoning.
Step 2
Now, let’s make the delicious seasoning! In a large bowl, combine the soy sauce, gochugaru, minced garlic, plum extract, fish sauce, and crushed toasted sesame seeds. Add the chopped green onions, green chili pepper, and red chili pepper. Stir everything together with a spoon until well combined to create the seasoning. Taste and adjust the soy sauce or spiciness according to your preference.
Step 3
It’s time to work with the fragrant perilla leaves. Wash the perilla leaves and pat them dry. Layer two leaves on top of each other. Spread about 1/2 tablespoon of the prepared seasoning evenly over the center of the layered leaves. Then, place another two perilla leaves on top. Repeat this process, layering two leaves and spreading seasoning, until all leaves are prepared.
Step 4
Now, let’s steam the prepared perilla leaves. Add an adequate amount of water to a steamer and bring it to a boil. Carefully place the seasoned perilla leaves in the steamer. Cover and steam over medium heat for about 7 minutes and 30 seconds. The perilla leaves will become tender, and the seasoning will be well absorbed. Be careful not to overcook, as they can become too mushy, so adhere to the cooking time.
Step 5
Your delicious steamed perilla leaves with savory seasoning are ready! Serve them on top of warm rice for a truly delightful meal. The savory and slightly spicy seasoning creates a perfect harmony with the rice. Any leftover steamed perilla leaves can be stored in the refrigerator and enjoyed as a side dish.
