- 3 Tbsp soy sauce (Using brewed soy sauce adds umami)
- 5 Tbsp vinegar (Balances the sweet and sour flavors)
- 2 Tbsp sugar (Adjust to your preference for sweetness)
- 1 Tbsp salt (Crucial for seasoning)
- Pinch of black pepper (Adjust to taste, adds depth of flavor)
- 50ml water (To create a smoother sauce consistency)
- 3 Tbsp cooking wine (Mirin/Sake) (Removes any unwanted odors and enhances flavor)
Cooking Instructions
Step 1
First, wash the baby Napa cabbage thoroughly. Cut each head in half. Place the cabbage halves in a steamer basket. Steam over boiling water for about 8 minutes, or until the cabbage is very tender and has wilted significantly. This steaming method preserves the natural sweetness and tender texture of the cabbage.
Step 2
Remove the seeds from the red and green bell peppers, wash them, and slice them thinly into strips. Finely slice the white parts of the green onions. These prepared vegetables will add a delightful crunch and fresh aroma to your steamed cabbage.
Step 3
In a bowl, combine 3 Tbsp soy sauce, 5 Tbsp vinegar, 2 Tbsp sugar, 1 Tbsp salt, a pinch of black pepper, 50ml water, and 3 Tbsp cooking wine. Whisk everything together to create a delicious special sauce. You can adjust the ratio of sugar and vinegar to match your taste. (Adding 1 Tbsp of oyster sauce is also a great option if you have it.)
Step 4
Once the cabbage is well-steamed, let it cool slightly. Then, cut the cabbage into three bite-sized pieces per half. Arrange the cut cabbage pieces attractively on a serving plate. Generously pour the prepared special sauce over the cabbage. Let it sit for a moment to allow the sauce to soak into the cabbage for even more flavor.
Step 5
Your delicious and tender steamed Napa cabbage, inspired by Chef Lee Yeon-bok, is now ready to be enjoyed by the whole family! Serve immediately while warm for the best taste.
