Nutrient-Boosted Potato Rice- 1 bowl of rice
- 2 medium potatoes
Fluffy Steamed Egg, Steamed Vegetables & Fragrant Eggplant Salad- 3 fresh eggs
- 1/2 cup (approx. 100ml) water or rice water
- A pinch of sea salt (to taste)
- A small amount of chopped chives
- 2 eggplants
- 1/4 head of cabbage
Crisp and Refreshing Red Cabbage and Chive Salad- 2 leaves of red cabbage
- 10g fresh chives
- 1/2 Tbsp anchovy sauce (for umami)
- A sprinkle of sesame seeds
- 1 tsp fragrant sesame oil

- 1 Tbsp vinegar

Cooking Instructions
Step 1
1. Making Potato Rice: Cook the rice as you normally would. Simply add diced potatoes on top before cooking. This simple addition makes for a nutritious and delicious potato rice, with the sweet potatoes adding a wonderful texture and flavor.

2. Preparing Steamed Egg, Steamed Vegetables & Eggplant Salad:
[Steamed Egg & Vegetables] In a bowl, crack the 3 eggs. Season with a pinch of sea salt and whisk gently to avoid creating too much foam. Add the chopped chives and mix well. Prepare a steamer by adding water and placing a rack inside. Arrange the sliced cabbage and eggplants on the rack. Pour the seasoned egg mixture over the vegetables. Cover and steam over low heat for 15-20 minutes. This will result in a moist and tender steamed egg custard and vegetables. You can check for doneness by inserting a skewer; it should come out clean.
[Eggplant Salad] Once the steamed eggplants have cooled slightly, tear them into bite-sized strips by hand. In a separate bowl, combine the torn eggplants with the chopped chives, sesame seeds, sesame oil, and 1 tablespoon of soy sauce. Gently mix everything together until well combined. This creates a fragrant and flavorful eggplant salad. Adjust seasoning to your preference.

3. Making Red Cabbage and Chive Salad: Thinly shred the red cabbage and cut the chives into 3-4cm lengths. In a mixing bowl, combine the shredded red cabbage and chives. Prepare the dressing by mixing 1/2 Tbsp anchovy sauce, 1 Tbsp vinegar, 1/2 tsp minced garlic, sesame seeds, and sesame oil. Pour the dressing over the vegetables and toss gently to coat. This salad offers a delightful crunch and a refreshing sweet and sour taste.
