  • 80g granulated sugar
  • 180g milk, at room temperature
  • 240g cake flour (or all-purpose flour)

Cooking Instructions

Step 1

In a mixing bowl, gently whisk the 2 room-temperature eggs until slightly broken up. Be careful not to create too much foam; whisk just enough to combine.

Step 2

Gradually add the 80g of sugar in 2-3 additions while continuously whisking. Continue mixing until the sugar is dissolved and the batter becomes slightly thick. Adding sugar in stages helps it dissolve better.

Step 3

Pour in the 180g of room-temperature milk and whisk until well combined. The milk will help create a smoother batter.

Step 4

In a separate bowl, sift together the 240g of cake flour, 1/2 teaspoon of baking powder, and a pinch of salt. Sifting ensures that the dry ingredients are evenly distributed and leads to a lighter cake texture.

Step 5

Add the sifted dry ingredients to the egg mixture. Gently fold them in using a spatula, cutting through the batter rather than stirring vigorously. Mix just until no dry flour streaks remain; overmixing can make the cake tough. Stir in the 1 tablespoon of black sesame seeds and a little vegetable oil (for greasing the mold).

Step 6

Lightly grease the baking mold or heatproof dish you’ll be using with vegetable oil. Pour the batter into the prepared mold, filling it about two-thirds full.
