- 0.5 Tbsp minced garlic
- 2 Tbsp chopped green onion (white parts preferred)
- 1 Cheongyang pepper, finely chopped
- 1 Tbsp sesame oil
- Sesame seeds, for garnish
Cooking Instructions
Step 1
First, let’s prepare the cabbage. If you’re on a diet, cabbage is a fantastic food to eat in abundance. When you buy a whole cabbage, you can cut around the tough core. For steaming as wraps, use the parts of the cabbage leaves that detach around the core, like shown in the picture. The outer leaves that you trim off can be thinly shredded and used in other various dishes.
Step 2
Now, let’s steam the cabbage. Fill a pot with plenty of water and bring it to a rolling boil over high heat.
Step 3
Once the water is boiling, place a steamer basket or rack inside the pot. Arrange the cabbage leaves you’ve prepared on the steamer. Cover the pot and let it steam for about 8 to 10 minutes over medium heat for the best texture. The steaming time can vary depending on the thickness and amount of cabbage. Avoid piling the leaves too high, as this can prevent even cooking. Aim for about 10 minutes of steaming. Once steamed, remove the cabbage and let it cool slightly.
Step 4
While the cabbage is steaming, we’ll make the delicious sauce for wrapping. Finely chop about 2 tablespoons of green onions, focusing on the white parts.
Step 5
Finely chop one Cheongyang pepper for a touch of spice. You can adjust the amount or omit it if you prefer less heat.
Step 6
In a bowl, combine 3 tablespoons of soup soy sauce, the 2 tablespoons of chopped green onion, and 0.5 tablespoon of minced garlic.
Step 7
Add 2 tablespoons of regular soy sauce to the bowl. Then, stir in 1 tablespoon of sesame oil for nutty aroma and a sprinkle of sesame seeds.
Step 8
Finally, add 1.5 tablespoons of red pepper flakes and mix everything well. This creates a wonderfully flavorful sauce perfect for wrapping. Note that this is not a traditional ssamjang (dipping paste), but a lighter, soy-sauce-based seasoning.
Step 9
By now, the cabbage should be perfectly steamed and ready to enjoy. It will have cooled down just enough to handle.
Step 10
Here’s the final step! Arrange the steamed cabbage on a plate and serve with the freshly made seasoning sauce. To eat, place a spoonful of rice and a bit of the sauce onto a cabbage leaf, then wrap it up. It’s incredibly delicious!
