Cooking Instructions
Step 1
First, let’s prepare the basic ingredients for a delicious beef and vegetable roll. Fresh vegetables and tender beef brisket are the stars of this dish!
Step 2
Next, prepare the colorful vegetables that will fill the rolls. A variety of colorful vegetables will make the dish look even more appealing.
Step 3
Wash the bean sprouts thoroughly under running water and drain them well in a colander. Keeping them crisp is key to a great texture.
Step 4
Wash the fragrant perilla leaves, trim off the stems, and cut them in half to match the size of the beef slices. This makes them easier to roll.
Step 5
Trim the hard stem ends from the fresh shiitake mushrooms. Then, carefully score the caps with a knife in a star pattern. This not only makes them look beautiful but also helps them absorb flavor better when cooked.
Step 6
Julienne the carrots, scallions/chives, king oyster mushrooms, and onions to a length that matches the beef slices. It’s best to cut them to a suitable length so they don’t make the rolls too bulky or difficult to handle.
Step 7
Now it’s time to assemble the beef rolls! Lay a slice of beef brisket flat. Place a perilla leaf on top, followed by a generous amount of the prepared vegetables. Then, roll it up tightly, similar to making sushi rolls. Make sure to roll them firmly so the beef doesn’t unravel.
Step 8
Once your beautiful beef rolls are ready, simply place them in the rice cooker to steam. It’s incredibly convenient!
Step 9
Pour 1+1/2 cups of water into the inner pot of your Cuckoo rice cooker. Using the measuring cup that came with your rice cooker will ensure the correct amount.
Step 10
Carefully place the steaming rack or tray inside the inner pot. Make sure it’s stable.
Step 11
Dampen a clean cloth or paper towel, wring out the excess water, and place it over the steaming rack. This will help the vegetables steam more moistly and keep the rice cooker clean.
Step 12
Arrange the drained bean sprouts evenly over the damp cloth. The bean sprouts will become tender as they cook, adding a pleasant texture.
Step 13
Place the rolled beef and vegetable bundles on top of the bean sprouts. Adding the large shiitake mushrooms alongside the rolls will enhance the overall flavor.
Step 14
Next, gently wrap the edges of the cloth around the rolls to keep them tidy. Then, carefully place the entire inner pot into the rice cooker.
Step 15
Close the rice cooker lid. If you’re using a Twin Pressure model, turn the handle to set it to the ‘Steam (No Pressure)’ mode. This mode is excellent for cooking ingredients gently while preserving their natural flavors.
Step 16
Press the ‘Menu’ or ‘Setting’ button, select the ‘Steam (No Pressure)’ function. Then, adjust the time to 15 minutes by pressing the left button, and finally, press the ‘Start’ or ‘Cook (No Pressure)’ button. Now, just relax until your delicious steamed rolls are ready!
Step 17
While the rolls are steaming, let’s make the accompanying tangy ponzu sauce. In a small bowl, combine 1 Tbsp soy sauce, 1 Tbsp lemon juice, 1 Tbsp oligosaccharide, and 1/2 Tbsp mirin. Add a little wasabi to your liking and whisk everything together. The subtle kick from the wasabi cuts through any richness and adds a delightful flavor.
Step 18
Once the cooking cycle is complete, carefully open the rice cooker lid, being mindful of the hot steam. Gently lift the rolls using the cloth and transfer them to a serving plate. Your delicious Steamed Beef Rolls with Vegetables are ready to enjoy! Serve them warm with the ponzu sauce for a truly delightful meal.
