Seasoning Ingredients

  • 1 Tbsp minced garlic
  • 1 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp fish sauce (kanari aekjeot)
  • 1 Tbsp plum extract (maesilcheong)
  • 1 Tbsp toasted sesame seeds
  • 1 Tbsp sesame oil
  • Pinch of whole sesame seeds

Cooking Instructions

Step 1

First, trim the stems off the baby peppers and wash them thoroughly under running water. After washing, soak the peppers in water with 1 tablespoon of vinegar for about 5 minutes to ensure any residual pesticides are removed. Rinse them again under clean water and drain well. Since we’ll be coating them in flour soon, you don’t need to dry them completely. Just shake them once or twice gently in a colander to remove excess water.

Add 3 tablespoons of buchim garu (pancake mix) and a pinch of salt to the washed and lightly drained baby peppers. Gently shake or toss them so that the flour evenly coats the surface of the peppers.

Line a steamer basket with a silicone mat or a clean kitchen towel. Add about 200ml of water to the steamer pot. Bring the water to a boil. Using just enough water prevents the peppers from becoming too soggy.

Once the steamer is producing ample steam, carefully arrange the flour-coated baby peppers in the steamer basket. Cover the steamer and steam for about 3 to 4 minutes. Be careful not to overcook them, as they can become too soft.

Steaming for 3 to 4 minutes should yield perfectly cooked baby peppers. They are done when the flour coating turns translucent. The most accurate way to check is to take one pepper and taste it to gauge the doneness. If you prefer them with a crisper bite, you can reduce the steaming time slightly.

Now, let’s prepare the delicious seasoning. In a mixing bowl, measure and add 1 tablespoon of minced garlic, 1 tablespoon of gochugaru (red pepper flakes), 1 tablespoon of kanari aekjeot (fish sauce), 1 tablespoon of sweet maesilcheong (plum extract), 1 tablespoon of savory toasted sesame seeds, and 1 tablespoon of fragrant sesame oil.

Mix all the measured seasoning ingredients in the bowl thoroughly with a spoon to create the seasoning sauce. Ensure all the flavors are well combined.

Add the steamed and slightly cooled baby peppers to the prepared seasoning sauce. At this stage, it’s crucial to mix gently to avoid dislodging the flour coating from the peppers. Use a spatula or spoon and toss very carefully until the peppers are evenly coated with the seasoning.
