- 200g Beef skirt steak (or your preferred cut)

First, bring a generous pot of water to a boil. Add a pinch of salt and cook the pasta noodles for 2 servings (about 200g). For the best texture, aim for ‘al dente’ by cooking for about 1 minute less than the package instructions, typically around 10 minutes. Reserve about one cup of the pasta water before draining.

Prepare the steak for your pasta. Take 200g of beef skirt steak (or your favorite cut) and gently pat it dry with paper towels. Heat a frying pan over medium heat, add a little oil, and sear the steak on both sides until golden brown and nicely seared. Cook the steak to your desired doneness; I prefer medium-rare.

Using the same pan you used to cook the steak, pour in 1 bottle of tomato sauce (about 500g). Once the sauce begins to simmer, add the drained pasta noodles. Toss the pasta well to coat it evenly with the sauce. If the sauce seems too thick, gradually add some of the reserved pasta water to achieve your desired consistency. Continue to cook and stir for 1-2 minutes, allowing the pasta to absorb the rich tomato flavor.

Finally, add a handful of fresh oak leaf lettuce or mixed greens. Gently toss them with the tomato sauce and pasta, just enough to slightly wilt them. Avoid overmixing to keep the greens fresh and vibrant. The crispness of the greens adds a lovely contrast.
