Steak Pot Rice with Whole Garlic
As the weather gets a bit chilly, I’ve been craving a hearty rice dish made with beef and a delicious crispy rice bottom (nurungji). So, I decided to make this Steak Pot Rice. It’s a wonderfully comforting meal that combines tender steak with fragrant, perfectly cooked rice and aromatic garlic.
Ingredients- 300g Steak (sirloin, flat iron, or your preferred cut)
- 30 cloves Whole Garlic
- 3 cups Rice
- Generous amount of Chives
- Olive oil, for cooking
- Fresh Thyme, a few sprigs (or dried thyme)
Cooking Instructions
Step 1
Let me introduce you to this delicious Steak Pot Rice. It’s the perfect comforting meal for those cooler days.
Step 2
First, rinse the rice thoroughly and let it soak in water for 30 minutes. Soaking the rice helps it cook evenly, resulting in a fluffier and more tender texture. After soaking, drain the rice well in a sieve.
Step 3
Prepare the whole garlic by removing the root end. Slice each clove thinly into about 0.3cm thick pieces (like garlic chips). Heat 1-2 tablespoons of olive oil in a pan over medium-low heat. Add the sliced garlic and cook slowly until golden brown and slightly crispy. Once cooked, transfer the garlic to a paper towel-lined plate to drain off excess oil. This process deepens the garlic’s flavor.
Step 4
While the rice is cooking, let’s prepare the steak. Pat the steak dry with paper towels to remove any excess moisture. Drizzle generously with olive oil on both sides, coating the meat. Season with coarse salt and freshly ground black pepper. Add fresh thyme sprigs generously over the steak. Let it marinate at room temperature for about 30 minutes to allow the flavors to meld and the meat to tenderize.
Step 5
Now it’s time to cook the steak. You can use the residual oil in the pan from cooking the garlic. Place the seasoned steak in the hot pan and sear over high heat for 1-2 minutes per side to lock in the juices. Cook to your desired level of doneness. Once cooked, remove the steak from the pan, let it rest for a few minutes, and then slice it into bite-sized pieces (about 2cm).
Step 6
Add the drained rice to your rice cooker. Use slightly less water than you normally would for regular rice. When the rice is nearly cooked and in the steaming phase, gently arrange the sliced steak pieces on top of the rice. Be careful not to mash the rice grains.
Step 7
Wash the chives and chop them into small pieces. Sprinkle the chopped chives generously around the steak on top of the rice, along with the crispy fried garlic slices you prepared earlier. The colorful addition makes the dish visually appealing and appetizing.
Step 8
Cover the rice cooker and let it steam for an additional 5 minutes. This final steaming allows the rice to become perfectly fluffy and infuses it with the delicious flavors from the steak, garlic, and chives.
Step 9
And there you have it – your delicious Steak and Garlic Pot Rice is ready! The aroma of fragrant garlic and the rich flavor of the steak create a truly wonderful meal. It’s absolutely delicious when mixed and eaten together. You can also serve it with a soy sauce-based dipping sauce, if you like.
