This squid and chive pancake was even more delicious when we made it on a rainy day. We packed it with plenty of squid, giving it a wonderful chewy texture and making it a nutritious snack. ^^

Ingredients

  • 2 bunches of chives (approx. 200g), washed and trimmed
  • 2 squid, cleaned and cut into bite-sized pieces (approx. 200g)
  • A small amount of carrot (approx. 1/4), thinly julienned
  • 3 cups (approx. 300g) pancake mix (buchim garu)
  • 2 cups (approx. 400ml) ice water
  • 1 Tbsp YeonDu (or soy sauce for soup) for umami
  • Cooking oil, for frying

Cooking Instructions

Step 1

First, thoroughly wash the chives under running water to remove any dirt or debris. Shake off excess water and cut them into approximately 5-6 cm lengths for easy eating. Cutting them too long can make them difficult to handle while frying.

Peel the carrot, wash it, and then thinly julienne it. This will add a lovely color and a crisp texture. It’s important to cut them thinly so they cook through properly.

Cut the cleaned squid into bite-sized pieces. If you chop them too finely, they tend to scatter and get fried too much in the oil. It’s better to cut them into pieces about 0.5cm thick or 1-2cm in size. This ensures a satisfying chewy texture!

In a large bowl, combine 3 cups of pancake mix with 2 cups of ice water. Whisk until smooth and lump-free. Using ice water helps create a crispier pancake. If the batter is too thick, add a little more water; if it’s too thin, add a bit more pancake mix to reach the desired consistency. Stir in 1 tablespoon of YeonDu for added savory flavor. (Optional: Whisking in one egg can make the pancake even softer.)

Add the prepared chives, carrots, and squid to the batter. Gently mix everything together with your hands until the ingredients are evenly coated with the batter. Avoid overmixing, as this can make the pancake tough.
