Enjoy your bean sprout soup rice bowl, excellent for hangover relief, even more special! Today, we’ll make a refreshing and savory soup rice bowl packed with fresh abyssal squid. It’s a perfect, hearty meal with spicy kimchi.
Main Ingredients- 300g bean sprouts
- 2 abyssal squids
- 3-4 leaves aged kimchi
- Anchovy-kelp broth, as needed (about 4-5 cups)
- Egg yolks
- Warm cooked rice
Seasoning & Garnish- 1/3 Tbsp sesame oil
- 2 pinches salt
- 1/2 Tbsp sesame seeds
- 1/3 Tbsp sesame oil
- 2 pinches salt
- 1/2 Tbsp sesame seeds
Cooking Instructions
Step 1
First, wash the bean sprouts thoroughly. Fill a pot with plenty of water, add a pinch of salt, and bring to a boil. Add the bean sprouts and cook until crisp-tender. Drain the cooked bean sprouts and place them in a bowl. Mix with 1/3 Tbsp sesame oil, 2 pinches of salt, and 1/2 Tbsp sesame seeds, gently tossing to combine. Set aside this seasoned bean sprout mixture.
Step 2
For the abyssal squid, peel off the skin. Score the surface with shallow cuts; this helps the seasoning penetrate and makes it look more appealing. Slice into bite-sized pieces (about 1-2 cm wide).
Step 3
Add the sliced abyssal squid to boiling water and blanch briefly. Overcooking can make it tough, so remove it as soon as the color changes. Set the blanched squid aside on a plate.
Step 4
For the aged kimchi, remove the inner spicy paste and slice it into bite-sized pieces (about 1 cm wide). If the kimchi is too sour, you can rinse it lightly with water before using.
Step 5
Now, prepare a ttukbaegi (earthenware pot) or a regular pot to assemble the soup rice bowl. Place the warm cooked rice at the bottom of the ttukbaegi. Top generously with the seasoned bean sprout mixture and the sliced aged kimchi. Gently ladle in the prepared anchovy-kelp broth, which has been boiled and slightly cooled, over the ingredients. Finally, place the egg yolk(s) in the center to complete the dish. (Oh dear, the yolk broke! But don’t worry, it won’t affect the taste.)
