Main Ingredients- 1 bunch scallions (approx. 100g)
- 1 tsp sesame oil
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
Rinse the fresh scallions thoroughly under running water. It’s crucial to wash them meticulously to remove any remaining dirt or debris. After washing, place the scallions in a colander and drain them well. Excess water can dilute the dressing, so gently shake them to remove moisture.
Step 2
Once drained, cut the scallions into bite-sized pieces. Cutting them about 3-4 cm long makes them easy to eat and maintains a pleasant crispiness. If they are too long, they can be difficult to pick up with chopsticks, so aim for a manageable length.
Step 3
In a large bowl, combine all the dressing ingredients: gochugaru, gochujang, vinegar, maesilcheong, oligodang, and minced garlic. Mix them well to create a delicious dressing in advance. Using maesilcheong and oligodang instead of sugar adds a deeper, more subtle sweetness. Adjust the tanginess with the vinegar to your preference. Making the dressing ahead allows the flavors to meld beautifully.
Step 4
Now, add the cut scallions to the large bowl containing the premade dressing. Gently toss everything together with your hands until the scallions are evenly coated. Be careful not to mash the scallions; mix them gently. Finally, drizzle in the sesame oil and sprinkle with toasted sesame seeds, tossing once more to incorporate the nutty aroma. Your delicious scallion salad is ready!
