Step 1
Prepare the fresh Bangpum Namul. First, trim and discard any tough stems. Wash the tender leaves and stems thoroughly under running water to remove any dirt or debris. Rinse multiple times to ensure they are completely clean.
Step 2
Bring a pot of water to a boil with a pinch of salt. Briefly blanch the Bangpum Namul for about 15-30 seconds – be careful not to overcook, as it can become mushy! Immediately after blanching, plunge the namul into cold water to stop the cooking process and preserve its crisp texture.
Step 3
Gently gather the blanched and cooled Bangpum Namul in your hands and squeeze out as much water as possible. Removing excess moisture is key for the dressing to adhere well and for the salad to taste its best. Avoid squeezing too forcefully, which can crush the delicate greens.
Step 4
In a mixing bowl, combine the gochujang, gochugaru, oligodang, minced garlic, chopped green onion, and sesame oil to make the seasoning. Add the squeezed Bangpum Namul to the dressing.
