A Special Sandwich Featuring Seasonal Aralia Shoots
Enjoying the fresh taste of aralia shoots, a beloved spring vegetable! Even though the weather is still a bit chilly and the shoots haven’t fully bloomed, these young ones offer a unique, slightly bitter, and wonderfully fragrant flavor. This morning, I decided to create a delicious and nutritious sandwich using these delightful shoots. Capture the essence of spring in every bite!
Sandwich Ingredients- 100g fresh aralia shoots
- 3 hard-boiled eggs
- 6 slices of bread
- A pinch of coarse salt (for blanching)
Seasoning for Flavor- 3 Tbsp mayonnaise
- 1 Tbsp honey
- 1 pinch of fine salt

Cooking Instructions
Step 1
First, prepare the main ingredients for your sandwich: fresh aralia shoots and hard-boiled eggs. It’s best to boil the eggs in advance and let them cool.
Step 2
Fill a pot with water and bring it to a boil. Once boiling, add a pinch of coarse salt. Carefully place the aralia shoots into the boiling water and blanch for just 10 to 20 seconds. Overcooking can diminish their crisp texture and aroma. Immediately remove the blanched shoots and rinse them thoroughly under cold running water. This rapid cooling helps preserve their vibrant green color and enhances their crispness.
Step 3
After rinsing the blanched aralia shoots, gently peel off any tough outer skin. Using only the tender inner part will make your sandwich much softer and more enjoyable.
Step 4
Finely chop the prepared aralia shoots into small, bite-sized pieces. Mash the hard-boiled eggs using a fork or similar tool until finely chopped. Chopping the ingredients finely will ensure they mix well and create a smoother filling.
Step 5
In a mixing bowl, combine the mashed eggs and the finely chopped aralia shoots. Add the mayonnaise, honey, and a pinch of fine salt. Mix everything together gently but thoroughly until well combined, creating a delicious and flavorful aralia shoot and egg salad.

Spread a generous amount of the prepared aralia shoot and egg salad onto one slice of bread. Use a spoon or spatula to spread it evenly, reaching close to the edges. This ensures a burst of flavor in every bite.
