Main Ingredients- 2 handfuls of assorted spring greens (fiddlehead ferns, oak leaf sprouts, spinach, etc.)
- 2 servings of thin pasta
- Fresh lettuce
- 2 oranges
- Cherry tomatoes, to taste
Spring Greens Garlic Oil- 4-5 Tbsp olive oil
- 10 cloves garlic, thinly sliced
- 1 Tbsp minced garlic
- Pinch of black pepper

Cooking Instructions
Step 1
Heat 2-3 tablespoons of olive oil in a pan over medium heat. Add the thinly sliced garlic and sauté until fragrant and lightly golden brown. Be careful not to burn the garlic.
Step 2
Once the garlic starts to turn golden, reduce the heat to low. Add all the prepared spring greens and stir-fry gently until they are lightly wilted and coated with the garlic oil. This will soften the greens slightly.
Step 3
When the greens are slightly cooked, turn off the heat for a moment and add 1 tablespoon of minced garlic to the pan. Mix well with the garlic oil and sautéed greens, ensuring the minced garlic is evenly distributed.

Return the pan to low heat and continue to stir-fry briefly to finish. Generously season with black pepper according to your preference for added flavor.

Peel the oranges and segment them, removing any pith. Halve the cherry tomatoes. Arrange the prepared orange segments and cherry tomatoes attractively over a bed of fresh lettuce. Feel free to customize your salad greens as you like.
