Ingredients- 100g Byurok Namul (Spring Greens)
- 1 Tbsp Soy Sauce
- 0.5 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil

Step 1
Begin by preparing the Byurok Namul. Rinse it thoroughly under cold running water to remove any soil or debris. Trim off any wilted leaves or tough stems for a cleaner, more pleasant texture.
Step 2
Bring a pot of water to a rolling boil. Add about 0.5 tsp of salt to the boiling water. Carefully add the prepared Byurok Namul and blanch for approximately 2 minutes. Be mindful not to overcook, as it can become too soft.

Immediately after blanching, drain the Byurok Namul and rinse it well under cold running water. This step is crucial to stop the cooking process and preserve its crisp texture.

Gently squeeze the excess water from the blanched Byurok Namul. Use your hands to press out the water, but avoid squeezing too hard, which could mush the delicate greens.

Place the drained Byurok Namul into a mixing bowl. A wider bowl will make it easier to toss and coat evenly with the dressing.
