Sushi Rice Ingredients- 2-3 bowls of brown rice
- Sushi vinegar (2 Tbsp rice vinegar, 1 Tbsp plum extract, a pinch of sugar, a pinch of salt)
Cooking Instructions
Step 1
First, prepare the King Oyster Mushrooms. Place the thinly sliced mushrooms in a dry frying pan with no oil over medium-low heat. Grill both sides until golden brown. This process enhances the mushrooms’ chewy texture and rich flavor.
Step 2
In warm brown rice, combine the sushi vinegar ingredients: 2 Tbsp rice vinegar, 1 Tbsp plum extract, a pinch of sugar, and a pinch of salt. Gently mix with a spatula or spoon, being careful not to mash the rice grains, to create the sushi rice. Adjust seasoning to your preference for an even more delicious result.
Step 3
Shape the prepared sushi rice into bite-sized portions, forming them into round or square shapes. Place a generous amount of seasoned spring greens on top of the sushi rice. Gently press down with your hand to ensure the greens adhere well to the rice. The fresh aroma of the spring greens will beautifully complement the sushi.
Step 4
Now, arrange the grilled King Oyster Mushroom slices neatly on top of the sushi. Wrap a 1cm wide strip of nori around the sushi to hold everything in place. If you are using spring greens with broad leaves, you can also spread them over the sushi and wrap them together for an alternative way to enjoy. Savor this delightful sushi, brimming with the flavors of spring!
