- Gochugaru (Korean chili flakes) 1 Tbsp
- Minced garlic 1 tsp
- Guk-ganjang (Korean soup soy sauce) 1 Tbsp (or regular soy sauce)
- Vinegar 1 Tbsp (for a tangy flavor)
- Oligosaccharide 1 Tbsp (for shine and sweetness)
- Sesame oil 1 Tbsp (for a nutty aroma)
- Toasted sesame seeds 1 Tbsp (for garnish)
Cooking Instructions
Step 1
First, wash the fresh chamnamul thoroughly under running water multiple times. Make sure to remove any dirt or debris.
Step 2
After draining the water, cut the chamnamul into bite-sized pieces, usually about 5-7 cm long. If they are too long, they can be difficult to eat.
Step 3
Place the prepared chamnamul into a large bowl. Geotjeori is best when tossed and eaten immediately to maintain its freshness and deliciousness.
Step 4
Wash the apple, remove the core, and slice it thinly into pieces similar in size to the chamnamul. The apple adds a satisfying crunch and a subtle sweetness, enhancing the chamnamul’s natural fragrance.
Step 5
Add the thinly sliced apple to the bowl with the chamnamul.
Step 6
Now, let’s make the delicious seasoning. Add 1 Tbsp gochugaru, 1 tsp minced garlic, 1 Tbsp guk-ganjang, 1 Tbsp vinegar, 1 Tbsp oligosaccharide, 1 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds directly into the bowl with the chamnamul and apple.
Step 7
We’ll mix everything together right in the bowl without making a separate seasoning paste. This method ensures the seasoning is evenly distributed and saves on washing up!
Step 8
Once all the seasoning ingredients are on top of the chamnamul and apple, it’s time to gently toss. Avoid kneading too vigorously, as this can make the greens taste raw. Gently mix with your hands as if lightly tossing.
Step 9
Gently toss until just combined, and it’s ready! The combination of the fragrant chamnamul, the crisp apple, and the sweet and sour dressing is truly delightful.
Step 10
Finally, taste the salad and adjust the seasoning if needed. If it’s too bland, add a little more guk-ganjang or salt to your preference. It’s best to adjust sparingly so it doesn’t become too salty.
Step 11
Transfer the nicely tossed chamnamul geotjeori to a serving dish, and you have a delicious and appetizing chamnamul salad ready to enjoy!
