Main Ingredients- 1 bag Sunchoke (prepared)
- 1 tsp Salt for blanching
Delicious Dressing- 2 Tbsp Vinegar
- 1.5 Tbsp Sesame oil
- 1.5 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Fish sauce (or Soy sauce for soup)
- 1 Tbsp Sugar
- 1 Tbsp Oligosaccharide (or corn syrup)
- 0.5 Tbsp Minced garlic
- 2 Tbsp Chopped green onion
- 1 Tbsp Toasted sesame seeds (or ground sesame seeds)
- 2 Tbsp Vinegar
- 1.5 Tbsp Sesame oil
- 1.5 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Fish sauce (or Soy sauce for soup)
- 1 Tbsp Sugar
- 1 Tbsp Oligosaccharide (or corn syrup)
- 0.5 Tbsp Minced garlic
- 2 Tbsp Chopped green onion
- 1 Tbsp Toasted sesame seeds (or ground sesame seeds)
Cooking Instructions
Step 1
Prepare one bag of sunchoke, which is usually sold at grocery stores. First, thoroughly brush off any dirt clinging to the sunchokes. If there’s a lot of soil, gently scrape it off with a knife. Then, rinse them multiple times under running water until clean. Ensuring the ingredients are thoroughly cleaned is key.
Step 2
Fill a pot with plenty of water and add 1 teaspoon of salt. Bring the water to a rolling boil. Once boiling, add the prepared sunchokes and blanch them for about 1 minute, no longer. Be careful not to over-blanch, as it can make the texture mushy. Immediately rinse the blanched sunchokes under cold running water to cool them down. Then, squeeze out as much water as possible by hand. Removing excess water is important so the dressing adheres well.
Step 3
Now, let’s make the delicious dressing. In a bowl, combine 1.5 tablespoons of gochujang, 1 tablespoon of fish sauce (or soy sauce for soup), 2 tablespoons of vinegar, 1 tablespoon of sugar, and 1 tablespoon of oligosaccharide. Add 0.5 tablespoon of minced garlic, 2 tablespoons of finely chopped green onion, and 1 tablespoon of toasted sesame seeds (or ground sesame seeds). Mix everything thoroughly to create the dressing.

Add the well-drained sunchokes to the prepared dressing. Gently mix and toss the sunchokes with the dressing using your hands until evenly coated. Be gentle to avoid breaking the sunchokes. Once thoroughly mixed, your delicious Sunchoke Salad is ready!
