Main Ingredients

  • Fresh wild chives (allium victorialis), 60g
  • Crisp apple, 1/2 medium
  • Pungent onion, 1/2 medium

Seasoning

  • Soy sauce, 1 tablespoon
  • Red pepper flakes, 1 tablespoon
  • Sesame oil, 1/2 tablespoon
  • Sesame seeds, 1/2 tablespoon
  • Plum extract (maesilcheong), 1 tablespoon

Cooking Instructions

Step 1

Gently wash the fresh wild chives. For the wild chives, you’ll use the green leaves and stems. Trim off any rough ends from the bulbous root part, ensuring it’s clean. (Tip: You can save the cleaned root bulbs to add depth of flavor to your doenjang jjigae, a Korean soybean paste stew.)

Step 1

Step 2

Wash the apple thoroughly. You can leave the skin on for extra crispness and nutrients, or peel it if you prefer. Slice the apple into thin, bite-sized pieces, about 0.5cm thick. Peel the onion and slice it into thin julienne strips.

Step 2

Step 3

In a mixing bowl, combine the prepared wild chives, sliced apple, and julienned onion. Now, let’s add the delicious seasoning ingredients: red pepper flakes, soy sauce, plum extract, sesame oil, and sesame seeds.

Step 3

Step 4

Gently toss everything together with your hands until the dressing evenly coats all the ingredients. Be careful not to overmix, as this can make the wild chives mushy. The key is to mix lightly and gently! (Tip: Taste and adjust the seasoning as needed. You can add a little sugar or corn syrup for sweetness, or a splash of vinegar for extra tanginess to suit your preference.)
