Cooking Instructions
Step 1
First, let’s prepare the magical sauce for our delicious stir-fried pork! In a bowl, combine all the sauce ingredients (soy sauce, gochujang, gochugaru, sugar, oligosaccharide, oyster sauce, cooking wine, minced garlic, minced ginger, and black pepper). Stir well until the sugar and oligosaccharide are completely dissolved. This step is crucial for a well-balanced sauce!
Step 2
Now, let’s prepare the pork. Use paper towels to thoroughly pat dry the pork shoulder, removing any excess blood. This step is important to prevent any gamey odor and ensure a clean flavor. Next, score the pork about two or three times with your knife; this will help the marinade penetrate better, making the meat even more flavorful.
Step 3
Pour all the prepared sauce over the pork. Use your hands to gently massage the sauce into the meat, ensuring it’s evenly coated. Let the pork marinate for about 10 minutes. This resting period will tenderize the meat and allow the flavors to meld beautifully.
Step 4
Time to prepare the fragrant minari! Gently rinse the minari under running water, being careful not to agitate it too much to preserve its aroma. Trim off any tough root ends and cut the minari into bite-sized pieces, about 4-5 cm long, keeping the leaves and stems together.
Step 5
While the pork is marinating, let’s get the vegetables ready. Slice the green onion lengthwise and then into 4 cm pieces. Thinly slice the whole garlic cloves. Slice the Cheongyang chili peppers diagonally to a similar length as the green onions. Adjust the amount of chili peppers to your preferred level of spice.
Step 6
Now, let’s start stir-frying! Heat a wok or large skillet over medium-high heat. Add a generous amount of cooking oil and sauté the sliced garlic until fragrant and lightly golden. This step builds a wonderful aromatic base for the dish. Be careful not to burn the garlic.
Step 7
Once the garlic is fragrant, add all the marinated pork to the skillet. Use chopsticks or a spatula to quickly break up any clumps of meat and stir-fry until the pork starts to cook. Stirring constantly prevents the meat from sticking together and ensures even cooking and sauce distribution.
Step 8
When the pork is about halfway cooked, add the sliced green onions to the skillet. Stir-fry them with the pork. The subtle sweetness of the green onions will complement the savory pork wonderfully.
Step 9
Reduce the heat to medium and continue to stir-fry until the pork is fully cooked through. Ensure the meat is cooked without burning the sauce. If there’s excess oil, you can carefully blot it away with paper towels.
Step 10
Once the pork is cooked, it’s time for the minari! Add the tougher stems of the minari to the skillet first and stir-fry briefly. Cook just until the stems begin to soften slightly; this helps maintain a pleasant crispness.
Step 11
After the minari stems have softened a bit,
Step 12
Add the minari leaves to the skillet and stir-fry very quickly, just to combine. Minari cooks very fast, so avoid overcooking, which can make it mushy and diminish its fresh flavor. The key is to stir-fry on high heat for a short time until wilted.
Step 13
Just before turning off the heat, sprinkle some toasted sesame seeds over the dish for added nutty flavor and aroma. Since sesame oil is already in the sauce, you can omit it or add just a tiny drizzle if you prefer.
Step 14
Voila! Your delicious Minari and Pork Stir-Fry, bursting with fragrant minari and a perfect balance of spicy and sweet flavors, is ready. Serve it beautifully on a plate. This dish is perfect as a satisfying meal with rice or as a fantastic accompaniment to drinks. Enjoy it spooned over hot rice!
