Recipe for Making Spring Cabbage Salad with Miso Dressing, Capturing the Essence of Spring
I’m sharing this recipe because I’ve found that everyone enjoys this Spring Cabbage salad made with seasonal spring cabbage. Let’s begin this delicious spring vegetable dish with a delightful miso dressing!
Spring Cabbage Miso Salad Ingredients- 1 head of fresh spring cabbage
- 1 Tbsp Miso paste (Doenjang)
- 1 Tbsp Sesame oil
- 1 Tbsp Minced garlic
- 1 Tbsp Toasted sesame seeds
Cooking Instructions
Step 1
Trim the tough ends of the spring cabbage and wash it thoroughly under running water. Carefully cut or tear off the hard base. Bring a pot of water to a boil, then submerge the base of the spring cabbage first and blanch for about 20-30 seconds. Blanching from the base ensures the leaves remain crisp and tender.
Step 2
Immediately rinse the blanched spring cabbage in cold water to stop the cooking process and cool it down. Once cooled, squeeze out as much water as possible by hand. Squeeze it firmly until no more water drips out; this is crucial to prevent a watery salad and allow the seasoning to adhere beautifully.
Step 3
Cut the thoroughly squeezed spring cabbage into bite-sized pieces. Aim for about 1.5 to 2 inches (3-4 cm) in length, as longer pieces can be difficult to eat. Place all the cut cabbage into a mixing bowl.
Step 4
Add 1 tablespoon of miso paste to the cabbage. Adjust the amount of miso based on its saltiness. It’s best to start with a smaller amount and taste as you go, adding more if needed.
Step 5
Drizzle in 1 tablespoon of sesame oil to enhance the overall aroma and flavor of the dish. The nutty fragrance of sesame oil will complement the savory notes of the miso and the freshness of the cabbage.
Step 6
Add 1 tablespoon of minced garlic for a pungent and aromatic kick. The mild sharpness of garlic harmonizes well with the miso, adding depth to the overall flavor profile.
Step 7
Finally, sprinkle in 1 tablespoon of toasted sesame seeds for an extra nutty crunch and visual appeal. All the seasonings are now in the bowl. Gently toss and mix the ingredients with your hands until well combined. Just like a mother’s comforting touch, mixing with care will result in a delicious and refreshing Spring Cabbage Miso Salad, bursting with the flavors of spring!
