Today, I’m sharing a recipe for ‘Bomdong Geotjeori’ (Spring Cabbage Salad) made with fresh, seasonal spring cabbage. It’s incredibly simple yet wonderfully appetite-stimulating. Spring cabbage is delicious on its own, but when seasoned like this, its charm is amplified. Get ready to make this delightful salad with its crisp texture and rich, flavorful dressing! Let’s get started!
Ingredients- 1 head of Spring Cabbage (Bomdong)
- 3 Tbsp Gochugaru (Korean chili flakes)
- 4 Tbsp Anchovy or Pollack Fish Sauce
- 2 Tbsp Maesil Cheong (Plum Syrup)
- 2 Tbsp Sugar
- 2 Tbsp Vinegar
- 0.5 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds

Step 1
First, let’s gather all the ingredients needed to make a sweet and crisp Spring Cabbage Salad!

Now, let’s start making our refreshing Spring Cabbage Salad! Begin by preparing one head of spring cabbage. Isn’t the flower-like shape of spring cabbage beautiful? To choose fresh cabbage, look for one with a yellowish hue in the center. This part is typically sweeter and more savory.

If you turn the cabbage over, you’ll see the base.
Step 4
Cut off the base of the cabbage. You can either separate the leaves one by one or gather the separated leaves and cut the base all at once. I carefully separated each leaf by hand.

Rinse the separated cabbage leaves several times under cold running water to ensure they are clean and free of any dirt or debris.

It’s best to cut the outer leaves, especially the larger ones, into bite-sized pieces. Gather the large cabbage leaves together.

Slice them into about 3 pieces.

There you have it! The spring cabbage is prepped in a simple way. You can enjoy its naturally sweet and crisp taste as is, but we’re going to transform it into a delicious salad.

Now, let’s make the delicious dressing. Prepare 3 Tbsp gochugaru (Korean chili flakes), 4 Tbsp anchovy or pollack fish sauce, 2 Tbsp maesil cheong (plum syrup), 2 Tbsp sugar, 2 Tbsp vinegar, and 0.5 Tbsp minced garlic.
