Ingredients

  • 1kg clams, purged of sand
  • 1/2 bunch water parsley (approx. 150g)
  • 4-5 Tbsp gochujang (Korean chili paste)
  • 3-4 Tbsp gochugaru (Korean chili flakes)
  • 2-3 Tbsp oyster sauce
  • Oligosaccharide or corn syrup, to taste
  • Pinch of black pepper
  • 2-3 Tbsp water-starch mixture (for thickening)
  • A little sesame oil

Cooking Instructions

Step 1

First, thoroughly purge the clams of sand. A good method is to place them in a wide bowl with enough water to cover, insert several metal chopsticks, and refrigerate overnight. This natural process helps the clams release any grit. Rinse the purged clams well under running water. In a large wok or pan, heat 1 Tbsp perilla oil (or sesame oil) and 1 Tbsp chili oil over medium-low heat. Add 1 Tbsp minced garlic and stir-fry until fragrant, being careful not to burn it. Add the cleaned clams to the pan and stir-fry over high heat. Once the clams begin to open, add the prepared sauce mixture (gochujang, gochugaru, oyster sauce, oligosaccharide, and pepper). Stir well to coat the clams evenly, cooking over medium heat to prevent the sauce from burning.

Prepare the water parsley by trimming any yellow leaves or tough stems. Wash it thoroughly and cut into bite-sized pieces, about 3-4 cm long. Once the clams are mostly cooked and have absorbed the sauce, add the prepared water parsley to the pan. Stir-fry briefly until the water parsley just starts to wilt. Gradually add the water-starch mixture (mix 2 Tbsp water with 1 Tbsp cornstarch until smooth), stirring continuously, until the sauce reaches your desired thickness. Don’t add all the mixture at once; add it gradually to control the consistency. Turn off the heat, drizzle in about 1/2 Tbsp sesame oil, and give everything a final gentle mix. This adds a wonderful aroma and gloss.
