Scrambled eggs are a simple yet delightfully tender egg dish, aren’t they? Today, I made scrambled eggs using ingredients I had in the fridge. This recipe is packed with nutrients, featuring fresh spinach, savory sausage, and sweet onions! It’s a wonderful brunch option perfect for a weekend morning.
Basic Ingredients- 1 handful fresh spinach
- 2 large eggs
- 1/2 medium onion
- 1 frankfurter sausage (or your favorite sausage or bacon)
Seasoning Ingredients- 3 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 2 Tbsp mirin (cooking sake)
- 1/2 Tbsp sugar

Cooking Instructions
Step 1
First, prepare about a handful of fresh spinach. Wash it thoroughly under running water and gently pat dry.

Thinly slice half an onion into strips. Slicing it this way helps it meld beautifully with the other ingredients when sautéed.

Slice one frankfurter sausage thinly, about 0.5 cm thick. Feel free to use any type of sausage or bacon you have on hand.

Crack two fresh eggs into a bowl. Whisk them well until the yolks and whites are completely combined and smooth.

Now, let’s make the special sauce. In a small bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 2 tablespoons of mirin, and 1/2 tablespoon of sugar. Stir everything together until well incorporated.

Heat a lightly oiled pan over medium heat. Add the sliced sausage and cook until it’s lightly browned and has rendered some of its fat, which adds great flavor. Next, add the sliced onions to the pan and sauté them until they become translucent.
