How to Make Spicy Yukgaejang Manduguk – A Hearty Dumpling Soup
The weather has suddenly turned quite cold! On days like these, nothing beats a hot and spicy soup. This Yukgaejang Manduguk is perfect for a hearty meal or even as a hangover cure.
Main Ingredients- 2 stalks green onions
- 6 frozen dumplings
- 2 eggs
- 750ml water
Seasoning and Broth Base- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp guk-ganjang (soup soy sauce)
- 1 Tbsp fish sauce
- 1 Tbsp minced garlic
- 2 cubes of beef bouillon or stick broth

Cooking Instructions
Step 1
First, wash the green onions thoroughly and cut them into 5cm lengths. If the stalks are thick, cut them in half lengthwise. This helps the seasoning penetrate better and ensures even cooking.
Step 2
In a bowl, crack the 2 eggs and beat them well, removing the chalazae (the white stringy bits). Whisk until smooth. Adding beaten eggs makes the soup broth richer and smoother.
Step 3
Heat 3 tablespoons of cooking oil in a deep pot over medium-low heat. Add the cut green onions and sauté until they start to soften and turn lightly golden. Then, add 2 tablespoons of gochugaru and stir-fry together for a minute, being careful not to burn it. This step releases the sweetness of the green onions and the aromatic flavors of the chili flakes.
Step 4
Pour 750ml of water into the pot with the sautéed green onions and chili flakes. Add 2 beef bouillon cubes (or stick broth), 1 tablespoon of minced garlic, 1 tablespoon of fish sauce, and 1 tablespoon of soup soy sauce. Stir everything together and bring to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 5 more minutes to allow the flavors to meld.
Step 5
While the broth is simmering, add the 6 frozen dumplings to the pot. Gently stir to prevent them from sticking together, and cook for about 5 minutes, or until the dumplings are fully cooked through.
Step 6
Finally, slowly pour the beaten eggs into the simmering soup along the edges of the pot. Let it cook for 1-2 minutes, or until the egg is set. Your delicious and spicy Yukgaejang Manduguk is now ready! For an extra touch, you can garnish with chopped green onions or a slice of chili pepper.
