Spicy Tuna and Cheese Dolsotbap
A simple ‘clean out the fridge’ one-bowl meal! This is a Dolsotbap (stone pot rice) dish with tuna and cheese, featuring wonderfully stretchy cheese and a delightful spicy kick.
Ingredients
- 1 small can of spicy tuna
- 2 Tbsp minced onion
- 0.5 Tbsp minced green onion
- 0.5 Tbsp minced carrot
- 3 Tbsp shredded cheese (cheddar or mozzarella)
- 1 Tbsp corn kernels
- 0.5 Tbsp sesame oil
- 3 Tbsp shredded mozzarella pizza cheese
Cooking Instructions
Step 1
Prepare all your ingredients before you begin. Mince the onion, green onion, and carrot. It’s best to have your rice cooked and warm.
Step 2
Lightly coat the inside of a Dolsot (stone pot) with 0.5 Tbsp of sesame oil. Place the Dolsot over medium heat and preheat for about 30 seconds. This helps prevent the rice from sticking and creates a delicious crispy bottom layer.
Step 3
Reduce the heat to low. Add the warm cooked rice to the Dolsot. Sprinkle in the minced onion, minced green onion, minced carrot, and corn kernels. Gently mix the rice and vegetables with a spatula or spoon until well combined. Once mixed, press the rice down evenly to form a flat layer. Let it cook on low heat for 2 minutes, allowing the bottom layer to lightly crisp up. Be careful not to use too high heat, as it can burn.
Step 4
Arrange the spicy tuna over the rice. Generously top with the shredded cheese (cheddar or your preferred cheese) and the shredded mozzarella pizza cheese. Cover with a lid and cook on low heat for another minute, just until the cheese begins to melt. Once the cheese is sufficiently melted and stretchy, turn off the heat. Let it sit, covered, for about 30 seconds to allow the residual heat to fully melt the cheese and meld the flavors. Your delicious Spicy Tuna and Cheese Dolsotbap is ready! Be careful, it’s hot.
