Main Ingredients- Chewy noodles (Jjolmyeon) 300g
- Canned whelks 1 can (approx. 200g)
- Onions 2
- Cucumber 1
- Dried shredded squid (Jinmichae) 2 handfuls (approx. 30g)
- Perilla leaves (Kkaennip) 10 leaves
- Carrot 1/2
Sweet, Sour & Spicy Dressing- Gochujang (Korean chili paste) 3 Tbsp
- Soy sauce 2 Tbsp
- Vinegar 4 Tbsp
- Gochugaru (Korean chili flakes) 4 Tbsp
- Whelk can liquid 1 Tbsp
- Minced garlic 1 Tbsp
- Sugar 4 Tbsp
- Wasabi (or mustard) 1 tsp
- Black pepper 1 tsp
- Cooking wine (Mirin) 2 Tbsp
- Gochujang (Korean chili paste) 3 Tbsp
- Soy sauce 2 Tbsp
- Vinegar 4 Tbsp
- Gochugaru (Korean chili flakes) 4 Tbsp
- Whelk can liquid 1 Tbsp
- Minced garlic 1 Tbsp
- Sugar 4 Tbsp
- Wasabi (or mustard) 1 tsp
- Black pepper 1 tsp
- Cooking wine (Mirin) 2 Tbsp
Cooking Instructions
Step 1
First, soak the dried shredded squid (Jinmichae) in cold water for about 30 minutes until softened. This step ensures a pleasant chewiness.
Step 2
Thinly slice the 2 onions and soak them in cold water for 30 minutes to remove their pungent flavor. This will enhance their sweetness and crispness.
Step 3
Wash the cucumber thoroughly. Then, gently rub its surface with the back of a knife or coarse salt. This technique helps remove any bitterness and ensures a crisp texture. After that, thinly slice it into strips.
Step 4
Carefully separate the chewy noodles (Jjolmyeon) so they are not clumped together. Thinly slice the carrot into strips. Roll the perilla leaves and slice them into about 0.5cm thick ribbons for an aromatic touch.
Step 5
In a bowl, combine gochujang, gochugaru, soy sauce, vinegar, minced garlic, sugar, black pepper, cooking wine, and wasabi. Whisk well until you have a smooth dressing. Mix thoroughly to ensure all ingredients are evenly incorporated.
Step 6
Open the canned whelks. Use only 1 tablespoon of the liquid from the can; this adds a wonderful savory depth and aroma. Cut the whelks into bite-sized pieces (halve or quarter them).
Step 7
Place all the prepared ingredients into a large mixing bowl: the chewy noodles, sliced onions, cucumber, carrot, perilla leaves, soaked dried shredded squid, and the cut whelks.
Step 8
Pour the prepared dressing over the ingredients in the bowl. Gently toss everything together to coat evenly, being careful not to break the noodles or make them mushy. Continue mixing until all ingredients are well coated with the flavorful dressing. Your delicious whelk noodle salad is now ready to enjoy!
