Jjolmyeon Main Ingredients

  • 200g Jjolmyeon noodles
  • 1 handful Bean sprouts (approx. 50g)
  • 1/3 Cucumber
  • A small piece of Carrot
  • A small piece of Onion
  • 1 Tbsp Sesame oil
  • A pinch of Sesame seeds

Spicy & Sweet Sauce Ingredients

  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Soy sauce
  • 1 Tbsp Sugar
  • 1 Tbsp Oligodang (corn syrup)
  • 2 Tbsp Double-strength Apple vinegar (use 4 Tbsp regular vinegar if not double-strength)
  • 1 tsp Minced garlic
  • 1/2 tsp Mustard powder (adjust to taste)

Cooking Instructions

First, let’s prepare the flavorful sauce that will make this Jjolmyeon so delicious. In a bowl, combine 1 Tbsp Gochugaru, 1 Tbsp Gochujang, 1 Tbsp Soy sauce, 1 Tbsp Sugar, 1 Tbsp Oligodang, 2 Tbsp double-strength Apple vinegar, 1 tsp Minced garlic, and 1/2 tsp Mustard powder. Whisk everything together until the sugar is dissolved. The mustard powder is optional, but it adds a nice zesty kick!

Next, we’ll prepare the fresh vegetables to accompany the noodles. Wash the cucumber thoroughly, remove the seeds, and thinly julienne it. Finely julienne the carrot and onion as well. Thinly sliced vegetables ensure a pleasant texture when eaten with the chewy noodles.

Now it’s time to separate the Jjolmyeon noodles. Since they often clump together, gently rub them with your hands to loosen each strand. This prevents them from sticking and ensures they cook evenly.

Immediately drain the noodles and rinse them under cold running water to remove excess starch. Drain them very well; excess water can dilute the sauce.
