Main Ingredients- 2 squids
- 1 handful of water parsley or chives (approx. 50g)
- 1/2 onion
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Spicy & Tangy Sauce- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp vinegar
- 1/2 Tbsp minced garlic
- 1 Tbsp corn syrup or oligosaccharide
- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp vinegar
- 1/2 Tbsp minced garlic
- 1 Tbsp corn syrup or oligosaccharide
Cooking Instructions
Step 1
Prepare the fragrant water parsley by cleaning it thoroughly. If the stems are too thick, split them in half or cut them into bite-sized pieces. If water parsley isn’t available, aromatic chives or crisp lettuce can be used as a substitute.

Add a satisfying crunch by incorporating any available vegetables from your fridge. Thinly sliced half an onion is a must, and feel free to add cucumber, carrots, or any other crisp vegetables you have on hand.

Now, let’s make the heart of our delicious stir-fried squid: the sauce! In a bowl, combine 1 Tbsp gochujang, 2 Tbsp gochugaru, 1 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp vinegar, 1/2 Tbsp minced garlic, and 1 Tbsp corn syrup. Whisk until smooth, ensuring no lumps remain. Achieving this perfect balance of spicy, sweet, and tangy flavors is key!
Step 4
Time to blanch the squid to a perfect, slightly chewy texture. Bring a pot of water to a rolling boil. Carefully add the prepared squid and blanch for just about 20 seconds. Be cautious not to overcook, as it can become tough. Immediately rinse the squid under cold running water to stop the cooking process and cool it down.

Once blanched, cut the squid into bite-sized pieces, about 1cm thick. Cutting them slightly thicker ensures a pleasant chewiness with every bite.

In a large mixing bowl, combine the cut squid, prepared vegetables, and water parsley (or chives). Pour the prepared sauce over the ingredients. Gently toss everything together until well coated with the flavorful sauce. Finally, drizzle in 1 Tbsp of sesame oil and sprinkle with 1 Tbsp of toasted sesame seeds to finish.
