Spicy & Tangy Ramen Salad: A Quick & Easy Meal
Quick Dinner Idea: Spicy and Sweet Ramen Salad for One
The irony of eating alone! Sometimes it’s convenient, sometimes lonely, sometimes delicious, and sometimes not. I originally wanted to make Bibim Guksu (spicy cold noodles), but upon arriving home, I realized all the other vegetables were in the fridge, but I had no noodles. How could I have forgotten? If I don’t have noodles, I’ll just use ramen! You can’t just boil ramen every day when you’re by yourself, right? Let’s make today’s ramen look fancy by turning it into a Bibim Guksu-style dish.
Main Ingredients- 1 packet of ramen noodles
- 1/4 cucumber
- 1/4 carrot
- 1/4 yellow bell pepper
- 1/4 red bell pepper
- 1/4 onion
- 1 handful of cabbage (approx. 50g)
Cooking Instructions
Step 1
First, wash and prepare your fresh vegetables. Julienne the cucumber, carrot, bell peppers, and onion into thin strips for the best texture. Cabbage can also be thinly sliced. Don’t be shy with the cabbage; adding more will give a wonderful crunch! Feel free to adjust the amount of vegetables to your liking.
Step 2
The secret to a delicious ramen salad is the sauce! In a bowl, combine 2 Tbsp gochujang, 1 Tbsp gochugaru, 1/2 Tbsp minced garlic, 2 Tbsp sugar, 1.5 Tbsp soy sauce, and 2 Tbsp vinegar. Mix well with a spoon until you have a smooth, flavorful sauce.
Step 3
Now, let’s cook the ramen noodles. Boil plenty of water and add the ramen. Cook it for about 30 seconds to 1 minute less than the package instructions to achieve a perfectly ‘chewy’ texture (al dente). Immediately rinse the cooked noodles under cold water to remove excess starch and drain them thoroughly. This prevents the sauce from sliding off.
Step 4
There are a few ways to mix your ramen salad! You can toss the vegetables with the sauce first, then top with the noodles. Alternatively, arrange the vegetables beautifully on top of the noodles and add the sauce. Or, simply combine everything in one bowl and mix it all together! Enjoy it your favorite way.

Now it’s time to enjoy your delicious ramen salad! Mix it well – right hand, left hand – and savor the flavors. (Tip: I usually have boiled eggs ready at home, but this time it was even easier as I didn’t need to cook them separately. I often use the steam function in my pressure cooker to cook eggs.)
