  • 6 leaves of well-fermented aged kimchi
  • 100g mixed grain rice (approx. 1/2 small bowl)
  • 100g chicken breast (low-sodium pre-cooked or boiled)

Cooking Instructions

I’m using delicious aged kimchi that I made last year. Carefully separate the cabbage leaves, then cut them into bite-sized pieces. Next, gently rinse off the seasoning from the cabbage leaves under running water and squeeze out any excess moisture by hand. (While it might feel wasteful to wash off the seasoning you carefully prepared during kimchi-making, lightly rinsing it ensures a cleaner taste for the wraps.)

I used a pre-cooked, low-sodium chicken breast product. Finely mince the chicken breast with a knife. (If using raw chicken breast, boil or steam it, let it cool slightly, and then mince it.)

In a mixing bowl, combine the mixed grain rice and the minced chicken breast. Gently mix them together with a spatula or your hands, breaking up any clumps of rice to ensure they are evenly incorporated.

Divide the mixed rice and chicken breast mixture into 6 equal portions. Take each portion and shape it into a small, bite-sized rice ball with your hands.

Place one of the prepared rice balls onto a kimchi leaf. Carefully roll up the kimchi leaf around the rice ball, either from top to bottom or side to side, to create a neat wrap. To make them easier to eat, cut each kimchi roll in half. Your delicious aged kimchi rolls are now ready to enjoy!
