Ingredients
  • 2 servings Somyeon noodles (approx. 200g)
  • 1/2 onion
  • 2-3 lettuce leaves
  • 1 hard-boiled egg
  • A little zucchini (optional)
  • A little carrot (optional)
  • A little sesame oil
  • A little sesame seeds

Seasoning Sauce
  • 5 Tbsp finely chopped aged napa cabbage kimchi
  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp soy sauce
  • 1/2 Tbsp gochugaru (Korean chili flakes)
  • 1/2 Tbsp sugar (or corn syrup)
  • 1 Tbsp maesilcheong (green plum syrup, or corn syrup)

Cooking Instructions

Step 1

First, prepare your vegetables. Thinly slice the onion. If you have zucchini and carrots, slice them into similar thin strips as well. (Feel free to use any other vegetables you have on hand, like cucumber or perilla leaves, as they also pair well!)

Step 2

Wash the lettuce leaves thoroughly and then slice them into bite-sized pieces, about 2-3 cm wide. This will add a refreshing crunch to your noodles.

Step 3

Bring a pot of water to a rolling boil over high heat for cooking the somyeon noodles. Once the water starts to boil vigorously, add about one cup of cold water. This step helps the noodles cook evenly and prevents them from becoming mushy.

Step 4

When the water comes to a boil again, add the sliced vegetables (onion, zucchini, carrot) and stir gently. Cook for about 1 minute, just until the vegetables are slightly tender. If the water threatens to boil over, add a little more cold water.

Step 5

Once the vegetables are cooked, turn off the heat. Drain the noodles and rinse them thoroughly under cold running water to remove excess starch. This rinsing is key to preventing the noodles from sticking together and achieving a wonderfully chewy texture.

Step 6

In a large mixing bowl, combine the finely chopped kimchi with all the ‘Seasoning Sauce’ ingredients: gochujang, soy sauce, gochugaru, sugar, and maesilcheong.

Step 7

Mix the seasoning ingredients together well with a spoon, gently mashing them. Taste the sauce and adjust the seasoning as needed, keeping in mind the saltiness of the kimchi. Be careful not to make it too salty, as it will be served with noodles.

Step 8

Add the drained, cooked noodles to the well-mixed sauce. Gently toss and mix everything together, being careful not to break the noodles.

Step 9

Once the noodles and sauce are thoroughly combined, drizzle in a little sesame oil and sprinkle generously with sesame seeds for added aroma and flavor. The nutty scent is sure to whet your appetite!

Step 10

Transfer the finished Kimchi Bibim Guksu to a serving bowl, piling it up attractively. A generous mound looks even more appetizing.

Step 11

Arrange the sliced lettuce leaves on top and place the halved hard-boiled egg. Finish with a sprinkle of sesame seeds and an optional extra drizzle of sesame oil if desired. Your simple yet delicious Kimchi Bibim Guksu is ready! Enjoy your meal!
