Hello everyone! When you lose your appetite, a bowl of sweet, sour, and spicy bibim guksu is the perfect remedy. Today, I’m sharing a simple kimchi bibim guksu recipe that anyone can make using just well-fermented kimchi. My son, a high school senior, devoured it so quickly – it truly makes a mother happy! You can also use young radish kimchi (yeolmu kimchi) if you have it on hand instead of napa cabbage kimchi. Enjoy this refreshing dish on a hot day!
Main Ingredients- 220g somyeon (thin wheat noodles)
- 1/3 cucumber
- 2 leaves of well-fermented napa cabbage kimchi
- 1 hard-boiled egg
Cooking Instructions
Step 1
1. **Make the Spicy & Tangy Bibim Sauce:** In a large bowl, combine 4 Tbsp kimchi brine, 1.5 Tbsp gochujang, 1 Tbsp gochugaru, 1 Tbsp soy sauce, 3 Tbsp vinegar, 1 Tbsp sesame seeds, 1 Tbsp sesame oil, and 2 Tbsp sugar. Mix well until the sugar is dissolved. Taste the sauce and adjust the seasoning (soy sauce, vinegar, sugar) according to your preference. Thinly slice 2 leaves of well-fermented napa cabbage kimchi and add them to the sauce, mixing everything together. The better fermented your kimchi, the more flavorful the sauce will be. 2. **Prepare the Toppings:** Wash 1/3 cucumber and thinly julienne it. Cut the hard-boiled egg in half.

3. **Boil the Noodles:** Fill a large pot with plenty of water and bring it to a rolling boil. Add 220g of somyeon noodles and cook for 3 minutes and 30 seconds. Stir the noodles once or twice to prevent them from sticking together. When the water starts to boil over, add about half a cup of cold water. Once it boils again, add another half cup of cold water. After the second boil, immediately drain the noodles and rinse them thoroughly under cold running water. Gently rub the noodles while rinsing to remove excess starch; this will make them chewier and more resilient. Rinse several times until the water runs clear, then drain them well in a colander.
Step 3
4. **Mix and Serve:** Place the well-drained noodles into the bowl with the prepared kimchi bibim sauce. Gently toss the noodles with the sauce until evenly coated.
